Food Adventures: Butternut squash and Vanilla bean Risotto
Last night I got together with the girls for a few glasses of wine and good eats! "Girls night" has become a bit of a regular habit (loves), and we all contribute by taking turns between apps, main entrees, side dishes, desserts, etc.! Last night was no exception and quite a scrumptious success!
I made risotto for the first time, and was very pleased with the outcome! Giada's recipe was unique (love butternut squash!) and surprisingly healthy! Surprising because it was incredibly rich despite the fact that there was no added cream- just 2.5 tablespoons of butter (not bad if you ask me) to achieve a creamy consistency!

Appetizer
Coconut curry spring rolls with Asian dipping sauce
Salad
Baby spinach with strawberries, walnuts, and Gorgonzola crumbles served with home-made vinaigrette
Main
Pan-fried, lightly breaded pork chops topped with creamy goat cheese sauce
Side
Butternut squash and vanilla bean risotto sprinkled with parmesan and fresh chives
Dessert
Decadent chocolate trifle
Bubbly!
