Food Adventures {Pumpkin and Ginger Souffle}

Did I mention that I heart Autumn?

And all things pumpkin?

Well as of last week, due to life in general, I had not had time to bake anything pumpkin or even buy a pumpkin.  I had had just about enough of thinking about them (It's kind of like thinking about happy hour all week, but not being able to go, then consuming copious amounts of whatever is on special) and finally caved by way of not just one, but three ways, in one night.  Here's the first of three tasty pumpkin treats...

 {If nothing more than guilt, the miniature crystallized hands of the pounds upon pounds of sugar that I consumed, pulled me out of bed that next morning to go on a 5 mile run along side the Big Dipper}

Pumpkin Ginger Soufflé

1 1/2 cups unsweetened soymilk, not low- or no-fat
1 tablespoon minced peeled fresh ginger
4 large egg yolks
3/4 cup sugar
5 tablespoons all-purpose flour
1 cup solid-pack canned pumpkin
8 large egg whites

Preheat oven to 375°F. Butter 8 6-ounce ramekins. In medium, heavy-bottomed saucepan over medium heat, bring soy milk to boil. Add ginger, remove pan from heat, cover, and let steep 30 minutes. Strain soy milk, discarding ginger, and set aside.

In large nonreactive bowl, whisk together egg yolks and 6 tablespoons of sugar. Whisk in flour until well combined. Gradually add hot milk, whisking constantly to prevent curdling. Return yolk mixture to saucepan and set over medium heat. Cook, whisking constantly, until custard boils and thickens enough to coat back of a spoon, 2 to 3 minutes. Transfer to large bowl, whisk in pumpkin purée, and set aside.
Using electric mixer with whisk attachment, beat egg whites until foamy and slightly opaque. With mixer running, add remaining 6 tablespoons sugar, 1 tablespoon at a time, then beat until stiff but not dry. Fold 1/3 of egg whites into pumpkin mixture to lighten, then add mixture to remaining whites, folding in gently but thoroughly.
Spoon batter into ramekins, filling almost to top, and lightly run finger around inside rim to create a "moat." Place ramekins in large baking pan. Place baking pan on middle oven rack and add hot water around ramekins to depth of 1 inch. Bake until soufflés have risen well above rim and tops are golden brown, about 25 minutes. Serve immediately.
 {Mom only had 6 ramekins so we used mini "cups of Te!"}

Enjoy!

p.s. It's Hump Day y'all! Doesn't this slouchy chic ensemble look perfect for coasting it thru to the weekend?

Pleasantly Unexpected

{Imagine how delighted you would be upon discovery of such a lovely secret door? I would want to prance around like I was the girl in A Little Princess or the children who discovered the magical wardrobe!}

{Would you really need a TV if you could swing about on a trapeze?}

{Wouldn't you feel so full of whimsy like Alice or Harry in this quirky cafe turned on its side? It's just steps away from the New York Public Library, and I imagine you could get lost in this cafe while getting lost in a good read.}

Hi loves! Sorry I was M.IA. yesterday. I went into the weekend off of 4 hours of sleep and then got terribly sick.  Somehow I made it through rehearsals, dinners, brunches, entertaining, errands, shopping, a wedding, a tailgate, preparing for a tailgate, a birthday, cleaning my poor wreck of a place, and then right when I was about to lay down to get some much needed shut eye, two weeks worth of packing...aye, aye, aye!

Anyways, this may not sound like much to all you super bloggers out there, but I reached 100 followers yesterday!! I'm wildly thrilled and can't thank y'all enough for following along with My Cup of Te.  Blogging has been an unexpected inspiration and such a pleasant surprise- your sweet comments unfailinginly bring a smile to my face and your unexpected messages make my day and inspire me to write more!

So once again, thank you :)

Much, much love,
Roxy

Happy Friday!

{via}

Hi loves! I'm so happy it's Friday. I get to go home today! One of me and A's best, best friends is getting married this weekend.  The same friend- Sorry B I must share- who at the last time we cheers'd it togeth decided to jump into our fountain, after which he completely stripped, and then ran around in tight quarters, inhibition free for what seemed like an eternity.  Anyways, I couldn't be more excited to celebrate with him and our best buddies from college.  On top of that, we're having an another ahh-maze tailgate in honor of a sister friend's birthday and an oldie, but goodie from high school is coming to town! I don't have to work after the party like last time so I can make like Trey and Nicki Minaj.  Have a wonderful weekend my dear lovelies!  But for now, since there are still 8 hours standing, here are some posts that are definitely My Cup of Te!

I like it on the floor. And on the couch. And maybe the kitchen sink depending on my mood.

I adore her, but if I cut my hair like this, I would look like my brother.

OB-SESSED with this coat and apparently so is Blair Waldorf. No wonder Intermix re-ordered this year.

This dude braved a jumpsuit and killed it with a pocket square that Tom Ford would applaud.

"Red-rum! Red-rum!" Meh, I was too preoccupied with the wallpaper to pee myself.

If I ate food made of this all day, I would be super model thin...and possibly dead.

Maybe I should just get my daily serving of veggies?

LC, I know we loved your leopard nails from last week, but you just may have been out done.

I much prefer my pumpkins a fantastic blazing orange, but I guess everyone loses their tan at some point

Speaking of tan, Snooki? Is that you?

Rag and Bone to Phillip Lim, if only I could pull off this Fall trend without looking like a Hit Me Baby One More Time 90's flashback.

And one day, I want the world to look like this.

Be Kind

 {Wise words from Etsy}

I'm sure you've all heard the about the Rutgers student, Tyler Clementi, who took his life because he was bullied by his roommate.  They've been talking about it everywhere from Dancing with the Stars, to Ellen, and even to AC 360 who will be featuring bullying all week.  It breaks my heart to think of how needless this all is and how it all could have been very easily prevented.

"Too often we underestimate the power of a touch, a smile, a kind word, a listening ear, an honest
compliment, or the smallest act of caring, all of which have the potential to turn a life around."

{All you need is love! My brother teaches English to little ones in Korea, and he likes to keep us posted on his international adventures!}
I try to be the best I can be everyday, but I know I'm not always perfect. If I'm honest, I've been on both sides, of bullying that is. When I lose sight of things and find my priorities in a scramble, I have a go to poem (if you can have a "go to" as such!) whose pages are worn and is bookmarked in one of my most favorite books. I re-discovered said book on a rainy day at a bookstore in the West Village during a time when I was really just beginning to discover myself. The poem is called A Prayer for Everyday, and it's kinda beautiful just like that day.  I wanted to share it with you in hopes you'll take it to heart.  For yourself. And for people like Tyler.
    Make me too brave to lie or be unkind.
    Make me too understanding, too, to mind
    The little hurts companions give, and friends,
    The careless hurts that no one quite intends.
    Make me too thoughtful to hurt others so.
    Help me to know....
    The inmost hearts of those for whom I care,
    Their secret wishes, all the loads they bear,
    That I may add my courage to their own.
    May I make lonely folks feel less alone,
    And happy ones a little happier yet.
    May I forget.....
    What ought to be forgotten; and recall
    Unfailing, all.....
    That ought to be recalled, each kindly thing,
    Forgetting what might sting.
    To all upon my way,
    Day after day,
    Let me be joy, be hope! Let my life sing!

    Who wants a hug? Happy Thursday, loves! Be Kind to someone today...it's almost the weekend :)

Chanel, is that you again?

I know most of y'all are in the middle of a boot buyin' craze, but how adore are these sweet mary jane flats?  They kind of remind me of this pair of Chanel flats.  What do you think, loves? Do I need?

Also, until I get around to posting...here's another DIY sneak peek from my Halloween party last year!
 Obvi a work in progress, but can you guess what it is? ;)

Falling for Autumn...

Don't you love the way Autumn smells?  The way it tastes?

And the cozy feeling of having it all around?

Shamefully, I haven't done much to celebrate my most favorite season of all (save buy a baby pumpkin or two and festive wall art by Martha) so tonight without further adieu, I shall celebrate Autumn with great chutzpah by whipping up a barrage of baked pumpkin goodies!  I have three on the orange colored list- Pumpkin Gingerbread, Pumpkin Chocolate Chip Cookies, and a Pumpkin Ginger Souffle.  I imagine I'll be all pumpkin'd out after this.  I can't wait :)  Bring on the spandex! What have you done to bring in the season, loves?

Martha, I don't care if you served jail time Part I

 {Robin aka my girlfriend B.Laney is right up there with Martha!  She hosted a fabulous party by going out all out Haunted House style! I dressed as a spooky ballerina in a tutu fashioned out of my wedding gown tulle (seriously), metallic silver spray paint, black sequins trim, and sewn in spiders! My apologies for the grainy pic!}

Insider trading, mehh. Blaze/traffic cone/I don't care if you're Gisele you can't pull off this shade of orange jumpsuit, whatev. Martha Stewart is still my girl. I've become far more domesticated than I ever imagined (don't worry, there are several that can attest to the fact that I still have party girl skills that even a rock star would be proud of) and I've learned that hosting a party is fantastic ten times over when Martha is giving you insider tips along the way.  Last year I hosted a Halloween party featuring a Martha Stewart spread (I'll share pics of my DIY's soon!) and this year, I couldn't help but to buy a few goodies from her adore crafts line!

{I couldn't bear to spend my pretty pennies on them all, can you guess which one came home with me?}

From spooky silhouettes to Mad Scientist beverage labels and even an invitation made complete with severed finger and all, her line will have you singing double, double toil and trouble faster than you can say eye of newt and toe of frog! Oh how I love everything about Fall!!

p.s. Pics of my last year DIY's coming soon! But for now a little sneak peek at my All Hallow's Eve fun...
